The charcuterie plate is filled with game deli meats, such as antelope pastrami, from small-batch producers. Tender attempts to source most of its products locally as much as possible, such as the honey dates from Pahrump that accompany the artisanal cheese platters. Starters are tasting platters that might include house-cured, apple wood-smoked Skuna Bay salmon with Niçoise-style vegetable salad in truffle vinaigrette. Proceed further back and the bar opens up to the main dining room, where cozy booths around the perimeter offer a semi-private dining experience. Plush leather couches and dark woods make each table feel intimate, like sitting in one’s own living room.
